Investigating the Effect of VSM on the Performance of Quick-Service Restaurants

Value Stream Mapping (VSM) is a value-based improvement approach that eliminates losses and processing time maximizes value added time, contributing to enhanced performance effectiveness. In this context, paper introduces VSM as different method for restaurant industry an overall perception output flow through differentiating wastes, improving cycle reduction assessing the final service. For purpose, research follows qualitative comprehensively investigate competence of stream in Quick-Service Restaurant. This study was based on analyzing production process specific single product Big Hamburger Meal (BHM) from classic meals case restaurant. The results indicate implementing principle contributes operational enhancement improvement. Future State Map indicates average 20% critical stages/activities BHM production. Also, principles suggest some modifications six activities; negotiation, purchasing, receiving, storing, handling food, packaging.
